Rapio Mill Coffee Cake

4 eggs

3 dl sugar

1½ dl whipping cream

3 tsp cinnamon

1 tsp gingerbread spice

2 tsp baking powder

3.75 dl cake flour

Beat the eggs and sugar until light and fluffy. Add cream and baking powder-spice-flour mix. Pour the mixture into a large greased cake tin floured with wheat bran. Bake at 175 degrees about 45-50 min.

Miller's Breadbuns

0.5 l water

1.5 tsp salt

2 tsp sugar

50 g yeast

2 tbs oil

12-13 dl Miller's flour mix

Prepare an ordinary yeast-leavened dough and allow to raise until doubled. Shape into buns, allow to raise and brush with water before baking.
Bake at 225 degrees about 10-15 min.

 The flour mixture may also be used for berry pie bases, scones, waffles and white bread.

Baked Apple Barley Pudding

1.2 l water

2 dl barley beads

scant 1 tsp salt

3-4 apples, sliced

¾ dl sugar

Peel and core apples.
 Place all ingredients in a baking dish dish.
 Bake at 175-200 degrees about 2-2.5 hours. Stir a couple of times during the first few minutes of baking.
 Serve as a dessert or snack.
